For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 8 oz cremini mushrooms, sliced
  • 3 cups fresh spinach
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add cubed chicken, season with salt, pepper, and paprika, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  2. In the same skillet, add diced onion and sliced mushrooms. Sauté until onions are translucent and mushrooms have softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth to deglaze the pan, scraping up any browned bits. Stir in heavy cream, dried thyme, and Parmesan cheese. Bring to a simmer, then return the cooked chicken to the skillet.
  4. Add fresh spinach and cook until wilted, about 2-3 minutes. Adjust seasoning with salt and pepper if needed. Serve hot over rice, pasta, or with crusty bread.

Notes

You can customize the seasonings to taste.
