For the Crust:
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, cubed
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook penne according to package directions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add cubed chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add broccoli and bell peppers. Sauté for 5-6 minutes until slightly tender. Add minced garlic and cook for another minute until fragrant.
- Reduce heat to medium-low. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce thickens slightly.
- Return cooked chicken and drained pasta to the skillet. Toss everything together until well coated in the creamy sauce. Cook for 2-3 minutes to heat through.
- Garnish with fresh parsley and serve immediately.
