For the Crust:
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, cubed
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add broccoli and bell pepper. Sauté for 5-6 minutes until vegetables are tender-crisp. Add minced garlic and cook for 1 minute until fragrant.
- Return chicken to the skillet. Pour in heavy cream and stir in Parmesan cheese, Italian seasoning, salt, and pepper. Simmer for 3-4 minutes until sauce thickens slightly.
- Add cooked penne pasta to the skillet and toss to coat evenly with the sauce. Serve hot.
