For the Crust:
- 1 package (14.4 oz) graham crackers
- 2 cups heavy whipping cream
- 1 cup powdered sugar
- 1 package (8 oz) cream cheese, softened
- 1 tablespoon orange zest
- 1/2 cup fresh orange juice
- 1 teaspoon vanilla extract
- 1 can (15 oz) mandarin oranges, drained
- 1/4 cup orange marmalade
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- In a large bowl, whip the heavy cream with powdered sugar until stiff peaks form; set aside.
- In another bowl, beat cream cheese until smooth, then mix in orange zest, orange juice, and vanilla until well combined.
- Gently fold the whipped cream into the cream cheese mixture to create a creamy citrus filling.
- In a 9×13 inch dish, layer graham crackers to cover the bottom, then spread half of the creamy filling evenly over the crackers.
- Add another layer of graham crackers, then the remaining creamy filling. Top with a final layer of graham crackers.
- Spread orange marmalade over the top layer, arrange mandarin oranges on top, and refrigerate for at least 4 hours or overnight before serving. Garnish with mint if desired.
