For the Crust:
- 1 lb cheese tortellini (fresh or frozen)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled tortellini, diced avocado, cherry tomatoes, crumbled feta, red onion, basil, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
