For the Crust:
- 4 large sweet potatoes, peeled and thinly sliced
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1/4 cup chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a bowl, mix melted butter, minced garlic, heavy cream, Parmesan, thyme, salt, and pepper.
- Arrange sweet potato slices in layers in the baking dish, pouring some of the cream mixture between each layer.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 15-20 minutes until potatoes are tender and top is golden.
- Garnish with fresh parsley before serving.
