Description

Tender, bite-sized chicken pieces cooked in a rich, creamy garlic sauce, served alongside golden, crispy roasted potatoes for a comforting and satisfying meal.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Toss halved potatoes with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy and golden.
  2. While potatoes roast, season chicken pieces with salt, pepper, and paprika. Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Cook chicken until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Add dried thyme and bring to a simmer.
  4. Return chicken to the skillet, reduce heat to medium-low, and cook for 5-7 minutes until sauce thickens and chicken is cooked through. Season with additional salt and pepper if needed.
  5. Serve creamy garlic chicken bites over the crispy roasted potatoes, garnished with fresh parsley.
