For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 lb baby potatoes, halved
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Toss halved potatoes with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy and golden.
- While potatoes roast, season chicken pieces with salt, pepper, and paprika. Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat. Cook chicken until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth and heavy cream, stirring to combine. Add dried thyme and bring to a simmer.
- Return chicken to the skillet, reduce heat to medium-low, and cook for 5-7 minutes until sauce thickens and chicken is cooked through. Season with additional salt and pepper if needed.
- Serve creamy garlic chicken bites over the crispy roasted potatoes, garnished with fresh parsley.
