For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice, uncooked
- 2 cups fresh green beans, trimmed
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions; set aside and keep warm.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and paprika, then cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add green beans and sauté for 4-5 minutes until tender-crisp. Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer and cook for 3-4 minutes until slightly thickened.
- Return chicken to the skillet, stir to coat in the sauce, and cook for 2 more minutes until heated through.
- Divide rice among bowls, top with the creamy garlic chicken and green beans, and garnish with fresh parsley.
