For the Crust:
- 8 oz spaghetti
- 2 boneless, skinless chicken breasts, cubed
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook spaghetti according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add cubed chicken, season with salt, pepper, and thyme, and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add sliced mushrooms and cook until softened and browned, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer and let cook for 3-4 minutes until slightly thickened.
- Stir in grated Parmesan cheese until melted and smooth. Return cooked chicken to the skillet and add the cooked spaghetti, tossing to coat evenly in the sauce.
- Garnish with fresh parsley and serve immediately.
