For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden brown, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add mushrooms and sauté until softened, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer, then return chicken to the skillet. Reduce heat to low, cover, and cook for 10-12 minutes until chicken is cooked through and sauce has thickened.
- Serve chicken and creamy mushroom sauce over cooked rice, garnished with fresh parsley.
