For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp dried Italian herbs
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- Steam broccoli florets until tender-crisp, about 5-7 minutes, then set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden and cooked through, about 6-8 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Pour in chicken broth, heavy cream, and dried herbs. Bring to a simmer, then reduce heat and cook until sauce thickens slightly, about 5 minutes.
- Stir in Parmesan cheese until melted and sauce is creamy.
- Serve chicken and sauce over cooked rice with steamed broccoli on the side.
