For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 lemon, juiced and zested
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear chicken until golden, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add onion and garlic, cooking until softened, about 3 minutes. Stir in rice, thyme, and parsley, toasting for 1 minute.
- Pour in chicken broth and bring to a simmer. Place chicken back on top, cover, and reduce heat to low. Cook for 15 minutes.
- Add broccoli florets around the chicken, cover again, and cook for another 10 minutes until rice is tender and broccoli is bright green.
- Stir in heavy cream, lemon juice, and zest. Simmer uncovered for 2-3 minutes until sauce thickens slightly. Garnish with fresh parsley and serve warm.
