For the Crust:
- 1 lb ground beef (or turkey)
- 1/2 cup breadcrumbs
- 1 large egg
- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tbsp chopped fresh dill
- Sliced cucumbers for garnish
Instructions
1. Prepare the Crust:
- In a bowl, combine ground beef, breadcrumbs, egg, parsley, oregano, garlic powder, salt, and pepper. Mix well and form into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Cook meatballs until browned on all sides and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, add rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, and dill into the cooked rice. Return meatballs to the skillet and heat through for 2-3 minutes.
- Serve in bowls, garnished with sliced cucumbers.
