Description

A quick and flavorful one-bowl meal featuring tender shrimp in a creamy herb sauce served over fluffy rice.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh dill
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

1. Prepare the Crust:

  1. Rinse the rice under cold water. In a medium saucepan, bring the broth to a boil, add the rice, reduce heat to low, cover, and simmer for 15-18 minutes until tender.
  2. While rice cooks, heat olive oil in a large skillet over medium-high heat. Add onion and garlic, sauté for 2-3 minutes until fragrant.
  3. Add shrimp to the skillet, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque.
  4. Reduce heat to medium-low. Pour in heavy cream and lemon juice, stirring to combine. Simmer for 2 minutes until slightly thickened.
  5. Stir in chopped parsley and dill. Remove from heat and adjust seasoning if needed.
  6. Serve the creamy herb shrimp over the cooked rice. Garnish with extra herbs if desired.

Notes

You can customize the seasonings to taste.
