For the Crust:
- 1 lb large shrimp, peeled and deveined
- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh dill
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Rinse the rice under cold water. In a medium saucepan, bring the broth to a boil, add the rice, reduce heat to low, cover, and simmer for 15-18 minutes until tender.
- While rice cooks, heat olive oil in a large skillet over medium-high heat. Add onion and garlic, sauté for 2-3 minutes until fragrant.
- Add shrimp to the skillet, season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes per side until pink and opaque.
- Reduce heat to medium-low. Pour in heavy cream and lemon juice, stirring to combine. Simmer for 2 minutes until slightly thickened.
- Stir in chopped parsley and dill. Remove from heat and adjust seasoning if needed.
- Serve the creamy herb shrimp over the cooked rice. Garnish with extra herbs if desired.
