- 1 cup whole milk ricotta cheese

- 1 tablespoon fresh mint, chopped
- 1 teaspoon fresh thyme leaves

- 1/4 teaspoon black pepper
- 2 tablespoons honey
- 1/4 cup toasted pine nuts
- 4 slices of thick-cut artisan bread, toasted
Instructions
1. Prepare the Crust:
- In a medium bowl, combine ricotta, basil, mint, thyme, salt, and pepper. Mix until smooth and well incorporated.
- Toast the bread slices until golden and crisp. Allow to cool slightly.
- Spread a generous layer of the herbed ricotta mixture onto each slice of toast.
