Ingredients

For the Crust:

  • 1 cup whole milk ricotta cheese
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey
  • 1/4 cup toasted pine nuts
  • 4 slices of thick-cut artisan bread, toasted

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine ricotta, basil, mint, thyme, salt, and pepper. Mix until smooth and well incorporated.
  2. Toast the bread slices until golden and crisp. Allow to cool slightly.
  3. Spread a generous layer of the herbed ricotta mixture onto each slice of toast.
  4. Drizzle each stack with honey and sprinkle with toasted pine nuts. Serve immediately.
