For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, and dried thyme on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until golden and cooked through. Remove chicken and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, lemon juice, and lemon zest, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream and bring to a simmer. Cook for 3-4 minutes until the sauce thickens slightly.
- Return chicken to the skillet and spoon the sauce over the top. Simmer for 2-3 minutes to heat through.
- Garnish with fresh parsley and serve immediately.
