For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup uncooked long-grain white rice
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup chicken broth
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with paprika, salt, and pepper, then cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add broccoli and bell pepper. Sauté for 5-7 minutes until tender-crisp. Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth, heavy cream, and lemon juice. Stir well and simmer for 3-4 minutes until slightly thickened.
- Return chicken to the skillet, stir to coat in the sauce, and cook for 2 more minutes to heat through.
- Divide rice among bowls, top with the creamy chicken and vegetables, and garnish with fresh parsley.
