Description

A vibrant, one-bowl meal featuring tender chicken in a zesty lemon garlic cream sauce, served over fluffy rice and roasted vegetables.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup uncooked long-grain white rice
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook rice according to package instructions and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with paprika, salt, and pepper, then cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  3. In the same skillet, add broccoli and bell pepper. Sauté for 5-7 minutes until tender-crisp. Add garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth, heavy cream, and lemon juice. Stir well and simmer for 3-4 minutes until slightly thickened.
  5. Return chicken to the skillet, stir to coat in the sauce, and cook for 2 more minutes to heat through.
  6. Divide rice among bowls, top with the creamy chicken and vegetables, and garnish with fresh parsley.
