For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 bunch kale, stems removed and chopped
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, and thyme. Heat olive oil in a large skillet over medium-high heat and cook chicken until golden, about 6 minutes per side. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute. Stir in rice and cook for 2 minutes. Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Return chicken to skillet, pour heavy cream over, and sprinkle with Parmesan. Cover and cook for 10 minutes until sauce thickens. Stir in kale until wilted. Serve hot.
