For the Crust:
- 1 lb penne pasta
- 1 lb Italian sausage, casings removed
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/2 tsp red pepper flakes (optional)
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook penne according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Stir in minced garlic and cook for 1 minute until fragrant.
- Reduce heat to low and pour in heavy cream, stirring to combine. Simmer for 3-4 minutes until slightly thickened.
- Add fresh spinach to the skillet and cook until wilted, about 2 minutes. Stir in cooked penne and Parmesan cheese until well coated and creamy.
- Season with salt, black pepper, and red pepper flakes if desired. Serve immediately with extra Parmesan on top.
