For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup orzo pasta
  • 1 cup ricotta cheese
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3-4 minutes.
  2. Add cubed chicken, minced garlic, Italian seasoning, salt, and pepper. Cook until chicken is browned and cooked through, about 6-8 minutes.
  3. Stir in orzo and chicken broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes until orzo is tender and liquid is mostly absorbed.
  4. Remove from heat and stir in ricotta and Parmesan cheese until creamy and well combined.
  5. Garnish with fresh parsley and serve warm.
