Description

A rich and comforting dish featuring creamy butter beans in a garlicky Tuscan-inspired sauce with sun-dried tomatoes and spinach.

For the Crust:

  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Stir in sun-dried tomatoes and cook for another 2 minutes.
  3. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
  4. Add butter beans, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes, stirring occasionally.
  5. Fold in fresh spinach and cook until wilted, about 2-3 minutes.
  6. Garnish with fresh basil and serve warm.

Notes

You can customize the seasonings to taste.
