A vibrant, elegant appetizer featuring smooth whipped feta topped with tangy marinated beets and a crunchy pistachio garnish.


Ingredients

For the Crust:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 cup cooked beets, diced
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 tbsp fresh dill, chopped
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. In a food processor, combine feta, cream cheese, olive oil, lemon juice, and garlic. Blend until smooth and creamy, about 2 minutes. Season with salt and pepper to taste.
  2. In a small bowl, mix diced beets with red wine vinegar and honey. Let marinate for at least 10 minutes.
  3. Spread the whipped feta on a serving plate. Top with marinated beets, then sprinkle with chopped pistachios and fresh dill.
  4. Drizzle with additional olive oil if desired and serve with toasted bread or crackers.
