For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 cup cooked beets, diced
- 2 tbsp red wine vinegar
- 1 tsp honey
- 1/4 cup shelled pistachios, roughly chopped
- 1 tbsp fresh dill, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a food processor, combine feta, cream cheese, olive oil, lemon juice, and garlic. Blend until smooth and creamy, about 2 minutes. Season with salt and pepper to taste.
- In a small bowl, mix diced beets with red wine vinegar and honey. Let marinate for at least 10 minutes.
- Spread the whipped feta on a serving plate. Top with marinated beets, then sprinkle with chopped pistachios and fresh dill.
- Drizzle with additional olive oil if desired and serve with toasted bread or crackers.
