For the Crust:
- 8 oz feta cheese, crumbled
- 1/2 cup Greek yogurt
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 2 medium beets, roasted and diced
- 1/4 cup red wine vinegar
- 1 tsp honey
- 1/4 cup shelled pistachios, roughly chopped
- 1 tbsp fresh dill, chopped
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a food processor, combine feta, Greek yogurt, 1 tbsp olive oil, lemon juice, and garlic. Blend until smooth and creamy. Season with salt and pepper to taste.
- In a small bowl, mix diced beets with red wine vinegar, honey, and remaining olive oil. Let marinate for at least 10 minutes.
- Toast pistachios in a dry skillet over medium heat until fragrant, about 3-4 minutes. Let cool, then mix with chopped dill.
- Spread the whipped feta on a serving plate. Top with marinated beets and sprinkle with the pistachio-dill crunch. Serve with crusty bread or crackers.
