For the Crust:
- 1 lb cooked chicken breast, shredded
- 8 oz lasagna noodles
- 2 cups fresh spinach
- 8 oz mushrooms, sliced
- 3 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 4 cups milk
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions, then drain and set aside.
- In a skillet, melt butter over medium heat. Add mushrooms and cook until softened. Stir in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Add garlic powder, onion powder, salt, and pepper. Cook until sauce thickens.
- Layer a baking dish with noodles, followed by sauce, chicken, spinach, and mozzarella. Repeat layers, ending with sauce and Parmesan on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 5-10 minutes until golden and bubbly.
