Description

A rich and comforting lasagna with tender chicken, earthy mushrooms, and fresh spinach in a creamy white sauce.

For the Crust:

  • 1 lb cooked chicken breast, shredded
  • 8 oz lasagna noodles
  • 2 cups fresh spinach
  • 8 oz mushrooms, sliced
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 4 cups milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions, then drain and set aside.
  2. In a skillet, melt butter over medium heat. Add mushrooms and cook until softened. Stir in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Add garlic powder, onion powder, salt, and pepper. Cook until sauce thickens.
  4. Layer a baking dish with noodles, followed by sauce, chicken, spinach, and mozzarella. Repeat layers, ending with sauce and Parmesan on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for another 5-10 minutes until golden and bubbly.

Notes

You can customize the seasonings to taste.
