- 1 large fennel bulb, thinly sliced

- 1/4 cup fresh parsley, chopped
- 1/4 cup toasted walnuts, roughly chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to make the dressing.
- Add the sliced fennel, apples, and parsley to the bowl with the dressing.
- Toss everything gently until evenly coated.
- Let the salad sit for 5-10 minutes to allow the flavors to meld.
- Just before serving, sprinkle with toasted walnuts for added crunch.
