Description

A refreshing, crunchy salad featuring crisp romaine lettuce, tossed in a tangy homemade Italian vinaigrette and topped with shaved Parmesan cheese for a simple yet flavorful side dish.

For the Crust:

  • 1 large head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, pitted and sliced
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shaved Parmesan cheese

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, and black olives.
  2. In a small jar or bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well combined.
  3. Pour the vinaigrette over the salad ingredients and toss gently to coat everything evenly.
  4. Sprinkle the shaved Parmesan cheese over the top of the salad just before serving.
  5. Serve immediately for the best texture and flavor.
