Description

Tender cod fillets coated in a crispy, savory parmesan and breadcrumb crust, cooked to perfection in the air fryer for a quick and healthy meal.

For the Crust:

  • 4 (6 oz) cod fillets
  • 1/2 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried parsley
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 large eggs, beaten
  • Cooking spray

Instructions

1. Prepare the Crust:

  1. Preheat air fryer to 400°F (200°C).
  2. In a shallow dish, mix parmesan, panko, garlic powder, paprika, parsley, salt, and pepper.
  3. Dip each cod fillet into beaten eggs, then coat evenly with the parmesan mixture.
  4. Lightly spray the air fryer basket with cooking spray and place fillets in a single layer.
  5. Air fry for 10-12 minutes, flipping halfway, until golden and fish flakes easily with a fork.
