A simple and delicious side dish featuring delicata squash sliced into rings, seasoned, and baked until crispy and golden.

For the Crust:

  • 2 medium delicata squash
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the delicata squash into 1/2-inch thick rings, scooping out seeds if desired.
  3. In a large bowl, toss squash rings with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  4. Arrange rings in a single layer on the prepared baking sheet. Sprinkle with Parmesan cheese if using.
  5. Bake for 20-25 minutes, flipping halfway through, until rings are tender and edges are crispy and browned.
  6. Serve warm as a side dish or snack.
