For the Crust:
- 2 medium delicata squash
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the delicata squash into 1/2-inch thick rings, scooping out seeds if desired.
- In a large bowl, toss squash rings with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
- Arrange rings in a single layer on the prepared baking sheet. Sprinkle with Parmesan cheese if using.
- Bake for 20-25 minutes, flipping halfway through, until rings are tender and edges are crispy and browned.
- Serve warm as a side dish or snack.
