For the Crust:
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread squash in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until crispy and tender.
- In a small bowl, mix feta cheese, honey, and red pepper flakes. Microwave for 20-30 seconds or heat gently until warm and pourable.
- Arrange roasted squash bites on a serving platter. Drizzle with the hot honey feta sauce and garnish with fresh parsley.
