For the Crust:

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, smoked paprika, garlic powder, salt, and pepper.
  2. Spread squash in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway, until crispy and tender.
  3. In a small bowl, mix feta cheese, honey, and red pepper flakes. Microwave for 20-30 seconds or heat gently until warm and pourable.
  4. Arrange roasted squash bites on a serving platter. Drizzle with the hot honey feta sauce and garnish with fresh parsley.
