For the Crust:
- 4 large carrots, peeled and cut into thin fry-like sticks
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 teaspoon chili flakes
- Fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, toss carrot sticks with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Spread carrots in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway, until crispy and golden.
- While carrots bake, prepare the feta dip by mixing feta, Greek yogurt, and lemon juice in a small bowl until smooth.
- For the spicy honey drizzle, warm honey slightly and stir in chili flakes. Set aside.
- Arrange baked carrot fries on a plate, drizzle with spicy honey, and serve with feta dip on the side. Garnish with parsley.
