For the Crust:
- 2 boneless, skinless chicken breasts, cut into strips
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 4 cups mixed greens (e.g., spinach, kale, arugula)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 tablespoon honey
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix panko breadcrumbs, garlic powder, paprika, salt, and pepper. Dip chicken strips in beaten eggs, then coat evenly with breadcrumb mixture.
- Place chicken on baking sheet and bake for 20-25 minutes until golden and crispy.
- While chicken cooks, prepare dressing: whisk olive oil, lime juice, honey, salt, and pepper in a small bowl.
- Assemble bowls: divide mixed greens, avocado slices, cherry tomatoes, and red onion among four bowls.
- Top with crispy chicken strips and drizzle with lime dressing. Serve immediately.
