For the Crust:
- 2 cups mashed potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh herbs (parsley, chives, dill)
- 1 egg, beaten
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar
- 1 tablespoon lemon juice
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, combine mashed potatoes, Parmesan cheese, chopped herbs, salt, and pepper. Mix until well incorporated.
- Shape the potato mixture into small cylinders or balls. Dredge each croquette in flour, dip in beaten egg, then coat with breadcrumbs.
- Heat oil in a deep skillet over medium heat. Fry croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- For the berry jam, combine mixed berries, sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until berries break down and mixture thickens, about 10 minutes.
- Serve crispy croquettes warm with a side of berry jam and garnish with additional fresh herbs.
