Description

A decadent dish featuring layers of crispy eggplant, creamy burrata cheese, and a luxurious truffle mushroom sauce.

For the Crust:

  • 1 large eggplant, sliced into 1/2-inch rounds
  • 2 burrata balls
  • 1 cup cremini mushrooms, sliced
  • 2 tablespoons truffle oil
  • 1 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil, season, and place on a baking sheet. Bake until golden brown, about 20 minutes.
  2. In a saucepan, sauté mushrooms in olive oil over medium heat until softened. Add truffle oil and cream, simmering until thickened, about 10 minutes.
  3. Layer eggplant slices with pieces of burrata, finishing with the mushroom cream sauce. Serve immediately.
