For the Crust:
- 8 oz block of feta cheese, cut into 1-inch cubes
- 1 cup fresh blueberries
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1/2 tsp lemon zest
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1 cup panko breadcrumbs
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss blueberries with maple syrup and olive oil on a baking sheet, then roast for 10-12 minutes until berries burst. Mash slightly and stir in lemon zest; set sauce aside.
- Set up a breading station: place flour in one bowl, beaten egg in another, and mix panko with oregano, salt, and pepper in a third bowl.
- Dredge each feta cube in flour, dip in egg, then coat in panko mixture, pressing gently to adhere.
- Heat vegetable oil in a skillet over medium heat. Fry feta bites for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- Serve crispy feta bites warm with the roasted blueberry maple sauce drizzled over or on the side for dipping.
