A gourmet flatbread featuring crispy crust, creamy melted brie, sweet homemade pear jam, and crunchy pistachio dust for an elegant appetizer or light meal.

For the Crust:
- 1 large flatbread or naan
- 200g brie cheese, sliced
- 2 ripe pears, peeled and diced
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1/4 cup shelled pistachios, finely chopped
- 2 tbsp honey
- Fresh thyme leaves for garnish
- Salt to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place flatbread on a baking sheet and bake for 5 minutes until slightly crispy.
- In a small saucepan, combine pears, sugar, and lemon juice. Cook over medium heat for 10-15 minutes, stirring occasionally, until pears break down into a jam-like consistency. Let cool slightly.
- Spread pear jam evenly over the pre-baked flatbread. Arrange brie slices on top.
- Bake for 8-10 minutes until brie is melted and flatbread edges are golden and crispy.
- While baking, toast pistachios in a dry pan for 2-3 minutes, then finely chop or crush into a dust.
- Remove flatbread from oven, drizzle with honey, sprinkle with pistachio dust and fresh thyme. Season with a pinch of salt if desired.
- Slice and serve warm.
