For the Crust:
- 1 large flatbread
- 4 oz goat cheese, crumbled
- 1/4 cup dried cranberries
- 1/4 cup shelled pistachios, roughly chopped
- 1/4 cup cranberry jelly
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Place flatbread on a baking sheet and brush with olive oil.
- Bake flatbread for 8-10 minutes until edges are crispy and golden.
- Remove from oven and spread cranberry jelly evenly over the flatbread.
- Sprinkle crumbled goat cheese, dried cranberries, and chopped pistachios over the top.
- Return to oven for 3-5 minutes until cheese is slightly softened.
- Garnish with fresh thyme, salt, and pepper. Slice and serve warm.
