For the Crust:
- 2 large apples, peeled and finely diced
- 1 cup caramel sauce, divided
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped mixed nuts (such as pecans and walnuts)
- 1/4 cup unsalted butter, melted
- Cooking spray
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin with cooking spray.
- In a bowl, mix diced apples with 1/2 cup caramel sauce. Set aside.
- In another bowl, combine flour, oats, brown sugar, cinnamon, and salt. Stir in melted butter until mixture is crumbly.
- Press about 1 tablespoon of the oat mixture into each muffin cup to form a base. Spoon a heaping teaspoon of the apple-caramel mixture into each cup.
- Sprinkle chopped nuts over the top, then cover with another tablespoon of the oat mixture, pressing lightly.
- Bake for 20-25 minutes, until golden and crisp. Let cool for 5 minutes, then drizzle with remaining caramel sauce before serving.
