For the Crust:
- 4 salmon fillets (6 oz each), skin-on or skinless
- 1/2 cup grated parmesan cheese
- 1/4 cup panko breadcrumbs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Lemon wedges for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix parmesan, panko, garlic, lemon zest, parsley, paprika, salt, and pepper.
- Brush salmon fillets with olive oil and lemon juice, then press the parmesan mixture evenly onto the top of each fillet.
- Place salmon on the baking sheet and bake for 12-15 minutes, until the crust is golden and salmon flakes easily.
- Serve immediately with lemon wedges.
