For the Crust:
- 1 (14 oz) can artichoke hearts, drained and patted dry
- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 2 large eggs, beaten
- 2 tbsp olive oil
- 1 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix Parmesan, panko, garlic powder, paprika, and pepper. Place beaten eggs in another bowl.
- Dip each artichoke heart into the egg, then coat evenly in the Parmesan mixture. Arrange on the baking sheet.
- Drizzle with olive oil and bake for 20-25 minutes, flipping halfway, until golden and crispy.
- Garnish with fresh parsley and serve warm with your favorite dipping sauce.
