For the Crust:
- 1 can (14 oz) artichoke hearts, drained and patted dry
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 2 large eggs, beaten
- 2 tablespoons olive oil
- Salt to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, and pepper. In another bowl, place beaten eggs.
- Dip each artichoke heart in egg, then coat evenly in the Parmesan mixture. Place on baking sheet.
- Drizzle with olive oil and bake for 20-25 minutes, flipping halfway, until golden and crispy.
- Serve warm with your favorite dipping sauce.
