For the Crust:
- 2 large russet potatoes, peeled and grated
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 2 tablespoons chopped fresh parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil for frying
Instructions
1. Prepare the Crust:
- Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine potatoes, Parmesan, flour, egg, parsley, garlic powder, salt, and pepper. Mix well.
- Heat vegetable oil in a skillet over medium heat.
- Form mixture into small patties (about 1/4 cup each) and flatten slightly.
- Fry patties for 3-4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with sour cream or your favorite dipping sauce.
