Description

Golden, crispy potato cakes made with grated potatoes, Parmesan cheese, and herbs, pan-fried to perfection for a delicious side dish or appetizer.

For the Crust:

  • 4 large russet potatoes, peeled and grated
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine potatoes, Parmesan, egg, flour, garlic, parsley, salt, pepper, and paprika. Mix well.
  3. Heat oil in a large skillet over medium heat.
  4. Form potato mixture into 8 equal patties, about 1/2-inch thick.
  5. Fry patties in batches for 3-4 minutes per side until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
