For the Crust:
- 4 large russet potatoes, peeled and grated
- 1/2 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup vegetable oil for frying
Instructions
1. Prepare the Crust:
- Place grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine potatoes, Parmesan, egg, flour, garlic, parsley, salt, pepper, and paprika. Mix well.
- Heat oil in a large skillet over medium heat.
- Form potato mixture into 8 equal patties, about 1/2-inch thick.
- Fry patties in batches for 3-4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil. Serve warm.
