Description

Savory, crispy muffins made with grated zucchini and potato, mixed with Parmesan cheese and baked to golden perfection.

For the Crust:

  • 2 medium zucchinis, grated and squeezed dry
  • 1 large potato, peeled and grated
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup chopped fresh parsley
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, combine grated zucchini, potato, Parmesan, flour, eggs, parsley, garlic powder, salt, and pepper.
  3. Mix until all ingredients are well incorporated.
  4. Spoon the mixture evenly into the muffin tin, pressing down lightly.
  5. Drizzle with olive oil and bake for 25-30 minutes, until golden and crispy.
  6. Let cool for 5 minutes before removing from the tin.

You can customize the seasonings to taste.
