Description

A savory-sweet appetizer featuring crispy smashed sweet potatoes topped with melted brie, tart cranberries, and crunchy spicy honey walnuts.

For the Crust:

  • 2 large sweet potatoes, peeled and cut into 1-inch rounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 ounces brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, roughly chopped
  • 2 tablespoons honey
  • 1/4 teaspoon cayenne pepper
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Place sweet potato rounds on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes until tender.
  2. Remove sweet potatoes from oven and use a fork or masher to gently smash each round flat. Return to oven and bake for an additional 10 minutes until crispy edges form.
  3. While sweet potatoes bake, combine walnuts, honey, and cayenne pepper in a small skillet over medium heat. Cook for 3-4 minutes, stirring until walnuts are coated and toasted. Set aside.
  4. Top each smashed sweet potato with a slice of brie and return to oven for 3-5 minutes until cheese is melted.
  5. Remove from oven, sprinkle with dried cranberries and spicy honey walnuts. Garnish with fresh thyme leaves and serve warm.

Notes

You can customize the seasonings to taste.
