For the Crust:
- 2 large sweet potatoes, peeled and thinly sliced into rounds
- 4 oz brie cheese, thinly sliced
- 1/2 cup cranberry jam
- 1/4 cup hot honey
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Lightly grease a muffin tin.
- In a bowl, toss sweet potato slices with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Layer 3-4 sweet potato slices in each muffin cup, adding a small piece of brie between layers. Repeat to fill each cup.
- Bake for 25-30 minutes until potatoes are crispy and tender.
- Remove from oven and let cool slightly. Top each stack with a dollop of cranberry jam and a drizzle of hot honey.
- Garnish with fresh thyme and serve warm.
