Description

Thinly sliced zucchini coated in seasoned breadcrumbs, baked until golden and crispy, served with a creamy basil mayonnaise dip.

For the Crust:

  • 2 medium zucchinis, thinly sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • Cooking spray
  • 1/2 cup mayonnaise
  • 2 tbsp fresh basil, finely chopped
  • 1 tsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dredge each zucchini slice in flour, dip in egg, then coat in breadcrumb mixture. Arrange on the baking sheet in a single layer and spray lightly with cooking spray.
  4. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  5. Meanwhile, mix mayonnaise, basil, and lemon juice in a small bowl. Serve zucchini chips warm with basil mayo.
