For the Crust:
- 2 medium zucchinis, thinly sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- Cooking spray
- 1/2 cup mayonnaise
- 2 tbsp fresh basil, finely chopped
- 1 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, paprika, salt, and pepper.
- Dredge each zucchini slice in flour, dip in egg, then coat in breadcrumb mixture. Arrange on the baking sheet in a single layer and spray lightly with cooking spray.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- Meanwhile, mix mayonnaise, basil, and lemon juice in a small bowl. Serve zucchini chips warm with basil mayo.
