For the Crust:
- 2 medium zucchinis, thinly sliced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 1/4 cup fresh basil, finely chopped
- 1 tbsp lemon juice
- 1 clove garlic, minced
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each zucchini slice into beaten egg, then coat with breadcrumb mixture, pressing gently to adhere.
- Arrange coated zucchini slices in a single layer on the baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy.
- Meanwhile, combine mayonnaise, basil, lemon juice, and minced garlic in a small bowl to make the basil mayo.
- Serve zucchini chips hot with basil mayo for dipping.
