Description

Thinly sliced zucchini coated in seasoned breadcrumbs and baked until golden and crispy, served with a creamy basil mayonnaise dipping sauce.

For the Crust:

  • 2 medium zucchinis, thinly sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil, finely chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip each zucchini slice into beaten egg, then coat with breadcrumb mixture, pressing gently to adhere.
  4. Arrange coated zucchini slices in a single layer on the baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy.
  5. Meanwhile, combine mayonnaise, basil, lemon juice, and minced garlic in a small bowl to make the basil mayo.
  6. Serve zucchini chips hot with basil mayo for dipping.

You can customize the seasonings to taste.
