For the Crust:

  • 2 medium zucchinis, thinly sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 1 cup mayonnaise
  • 1/2 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine breadcrumbs, Parmesan cheese, salt, and pepper in a bowl. Dip zucchini slices in beaten eggs, then coat with breadcrumb mixture.
  3. Place coated zucchini on the baking sheet and bake for 20-25 minutes or until golden and crispy. Meanwhile, mix mayonnaise, basil, and lemon juice in a small bowl for dipping sauce.
