Description

A comforting twist on classic meatloaf, slow-cooked with savory French onion flavors and topped with melted Swiss cheese for a rich, hearty meal.

For the Crust:

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1 packet French onion soup mix
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 large onion, thinly sliced
  • 4 slices Swiss cheese
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground beef, breadcrumbs, eggs, French onion soup mix, milk, ketchup, and Worcestershire sauce. Mix until just combined.
  2. Shape the mixture into a loaf and place it in the crockpot. Arrange the thinly sliced onions around and on top of the meatloaf.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the internal temperature reaches 160°F.
  4. About 10 minutes before serving, place the Swiss cheese slices on top of the meatloaf. Cover until the cheese melts.
  5. Carefully remove the meatloaf from the crockpot, garnish with parsley if desired, and let rest for 5 minutes before slicing.
