For the Crust:
- 1 large flatbread or naan
- 4 oz brie cheese, sliced
- 1/4 cup raspberry preserves
- 2 tbsp honey
- 1/4 cup shelled pistachios, toasted and chopped
- 1 tbsp olive oil
- Fresh thyme leaves for garnish
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Place flatbread on a baking sheet and brush lightly with olive oil.
- Arrange brie slices evenly over the flatbread. Bake for 10-12 minutes, until cheese is melted and edges are golden.
- In a small saucepan, warm raspberry preserves and honey over low heat, stirring until smooth.
- Drizzle the raspberry-honey glaze over the baked flatbread. Sprinkle with toasted pistachios and fresh thyme.
- Season with a pinch of salt and black pepper. Slice and serve warm.
